Potatoes au Gratin

The easiest recipe and the one I've been making on a constant rotation for years! Make sure the potatoes are really nice and tender after the first portion of the baking (can take up to an hour to bake them until tender so don't worry) then once you add the cheese they will continue to cook and the top will get gloriously browned and bubbly. These are so wonderful, even along side something like braised short ribs or roasted chicken. These should come with a warning that says “warning, you won’t be able to stop eating them” they are sensational I tell you!! To make the dough in advance, scoop out onto a baking sheet and freeze, when ready to bake, allow them to come to room temperature for about 30 minutes then add 2 minutes of baking time to your total time (should be 10 minutes ) and they are perfect! I have not used a hot chocolate replacement so can’t advise on that.
