Moroccan Orange Walnut Salad / سلطة البرتقال والجوز – CookingWithAlia – Episode 398

Let's continue the Moroccan Salad Series with this super easy and refreshing Orange Walnut Salad! INGREDIENTS: - 2-3 oranges (Navel) - 1 lettuce - 1/2 cup of raw unsalted walnuts For the dressing: - 1/4 cup fresh orange juice - 1 tablespoon lemon juice - 1/2 tablespoon olive oil - 1 teaspoon orange blossom water - 1 tablespoon sugar - Pinch of salt WRITTEN RECIPE: 1- The first step is to peel and section the oranges. 2- Using a sharp knife, cut the ends of each orange. Then slice the peel off the sides. 3- With a gentle sawing motion, slice the orange pieces in between 2 membranes. 4- Squeeze the remaining membranes to get all the excess juice in a separate bowl, keep on the side we will use it later. 5- Next, let’s prepare the lettuce. Remove the outer layers of the lettuce and discard. 6- Chop the bottom of the lettuce and peel the leaves. Slice the lettuce. 7- Place the lettuce in a large bowl and add the orange pieces to it. Now let’s make the salad dressing. 8- In a bowl add the orange juice, fresh lemon juice, olive oil, orange blossom water, sugar, and a pinch of salt. Mix. 9- Add the dressing to the lettuce and oranges. Then top with raw walnuts to add some crunch. Toss… and serve. 10- Time to enjoy… hmmm Bonne appetite!

Moroccan Roasted Pepper Salad / سلطة الفلفل – CookingWithAlia – Episode 396

Let's continue the Moroccan Salad series, with the simple and delicious roasted pepper salad! INGREDIENTS: 4 Bell peppers 2 tablespoons Fresh lemon juice 2 tablespoons Olive oil 1/2 teaspoon Salt 1/4 teaspoon Ground cumin RECIPE: Step 1: roasting the peppers Place the bell peppers on a baking pan covered with foil. Put the baking sheet in a preheated oven to 400 F degrees / 200 C. Roast the peppers for around 20 minutes. Then, turn the peppers to their other side. Place back in the oven and roast for another 20 minutes. The peppers are ready when the skin is charred and the peppers look soft. Step 2: Steaming the peppers Place the peppers in a plastic bag and seal the top. Let the peppers rest for around 10 minutes, where they steam in their own heat. This will make the skin easier to peel. Remove the peppers one at a time from the bag, and start seeding and peeling. Step 3: Marinating the peppers Slice the peppers into strips Prepare some fresh lemon juice In a bowl, place the pepper slices, add olive oil, lemon juice, salt, and ground cumin Mix. Serve warm or cold.. don’t forget the crusty bread… hmmm Bon appetit

Moroccan Eggplant Salad with Charmoula / سلطة الباذنجان – CookingWithAlia – Episode 395

In this Moroccan Salad series, we are going to explore the famous Moroccan side dishes presented along the main course. INGREDIENTS: 4 small eggplants Vegetable oil for frying Charmoula Sauce Ingredients: 2 tablespoons lemon juice 3-4 garlic cloves 3 tablespoons chopped cilantro 3 tablespoons chopped parsley 2 tablespoons olive oil 1 tablespoon paprika 1 teaspoon ground cumin 1/4 teaspoon chili pepper (to taste) 1/2 teaspoon salt (to taste) WRITTEN RECIPE: Step 1 – Cut the eggplants Cut the eggplants lengthwise in half, but keep them attached at the base, do not cut all the way through. Then make another cut the same way as if you were cutting the eggplants into quarters. Step 2- Make the Charmoula sauce Roll the lemons and juice them. Grate the garlic cloves. Finely chop the cilantro. Finely chop the parsley. In a bowl mix all the ingredients: the garlic, cilantro, parsley, olive oil, and the lemon juice. Add the spices: paprika, ground cumin, hot chili pepper, and salt. Mix. Step 3 – Fry the eggplants In a large pan, heat the vegetable oil, and fry the eggplants. The eggplants are ready when they have a beautiful deep golden brown color. Use a paper towel to remove excess oil Step 4 – Combine all Place the fried eggplants in a plate, and coat with the charmoula sauce. Marinate for one hour before serving. Enjoy with toasted bread
