[ENG] White Hessoua (Oats or Barley Milk Soup)/حسوا بيضاء (حساء الشوفان أو الشعير بالحليب) – CWA-690

Today, we are discovering a new authentic Moroccan recipe in the “Dada Series Saison2” in collaboration with @LaMaison Arabe: White Hessoua. This soup is usually served in Morocco as a dinner, plus it is along with our vegetarian week. I’m sure that your family and friends will love it 🙂 Give it a try and let me know how it goes.

INGREDIENTS:
100 grams (1 cup) steel-cut oats or barley
1 tablespoon olive oil
Salt, to taste
500 ml (2 cups) water
250 ml (1 cup) milk
Dried thyme for decoration and flavor

DIRECTIONS:
1- On medium high heat, in a large saucepan, add water, salt, and olive oil. Once the water is hot, add the oats or barley.
2- Bring the mixture to a boil and continue cooking for 15 minutes or so until the soup becomes thick.
3- Add the milk.
4- Reduce the heat to medium-low and continue cooking, stirring occasionally, for around 10 minutes.
5- Serve the soup hot and for more flavor crush some dried thyme on top!

Oil your pan (10x14” or 9x13), add parchment if you like, and pour in the remaining 1/4 cup oil. Do a quick set of coil folds (don’t skip—helps trap air), then transfer dough to the pan. Gently stretch slightly (it’ll spread as it rises), oil the top, cover with parchment, and let rise 1 hour. Preheat oven to 450°F. Dimple with oiled fingers, drizzle more oil, add salt + rosemary, and bake on the lowest rack for 20 minutes until deeply golden. Rest 5 minutes, then cool on a wire rack.
