    Creamy Chicken Tarts & Crepes /فطائر الدجاج – CookingWithAlia – Episode 386

    BECHAMEL INGREDIENTS: 2 cups (475 ml) milk 2 tablespoons (30 grams) butter 2 tablespoons all-purpose flour Fresh nutmeg (grated) + salt OTHER INGREDIENTS: 3 chicken breasts A handful of raw walnuts (chopped) Puff pastry (https://www.youtube.com/watch?v=mqSo3kWmFSM) Crepes (https://www.youtube.com/watch?v=8mSc4bfLlZA) Grated cheese Chopped fresh cilantro Salt and pepper (to taste) Olive oil RECIPE: MAKING BECHAMEL SAUCE 1- On medium heat, melt 2 tablespoons of butter in a saucepan then add 2 tablespoons of all-purpose flour. Mix well using a whisk and cook on medium heat until the mixture starts bubbling. At this point, add 2 cups of milk. So here is the secret of béchamel sauce, basically keep stirring the whole time! 2- Once you add the milk, cook the mixture on medium heat and keep stirring until the milk reaches a boiling point. After the milk reaches a boiling point, watch your timer, and continue cooking the sauce for 5 minutes. Remember, stir constantly. 3- You will notice that the sauce will become thick and since you have been stirring all the time, the sauce will be smooth! 4- Place the béchamel sauce in a bowl and season with freshly grated nutmeg and salt. CHICKEN FILLING 1- Cut the chicken breasts into bite-size pieces 2- Drizzle olive oil on a flat pan and heat on medium heat. Place the chicken pieces in the pan, season with salt and pepper, and cook for a few minutes until done. 3- Place the chicken in a bowl, add the chopped walnuts, and the a little bit of bechamel sauce. Mix well. 4- Remove the chicken and the walnuts from the bit of sauce and reserve. 5- Take the sauce with the chicken juices and mix it with the remaining bechamel sauce. CREPE CHICKEN GRATIN 1- Prepare the crepes 2- Place some of the chicken filling in each crepe and roll 3- Place the rolled crepes in a baking pan. Cover with the bechamel + chicken sauce (mixed) 4- Top with grated cheese 5- Bake in preheated oven at 360 F / 180 C until the cheese has melted and the top gets a nice golden brown color CREAMY CHICKEN TARTS 1- Lightly flour your working space, the top of the puff pastry, and your rolling pin. Roll out the puff pastry. 2- Place the circles of the pastry in the small tart shells 3- Gently press in the center and sides of the pastry so it takes the shape of the muffin wholes. If the excess pastry is sticky, wrap with a plastic sheet and chill in the fridge for 30 minutes before rolling it again. 4- Poke the pastry base with a fork multiple times, then line the pastries with baking cups, and place a bunch of beans in the cups. We are adding weight on the puff pastry base so that is does not puff and stays flat. 5- Place the pastry cups in the fridge for 15 minutes before baking them in a preheated oven at 400 F / 200 C for around 20 minutes. 6- Fill with the chicken filling and top with chopped cilantro

Wish I learned about Paleo lifestyle before I got sick and gained alot of weight. I wanted to try paleo for weight loss and health reasons (I was diabetic for a long time). I was given the lecture from my doctor time after time about what was going to happen to me He tried to scare me into shape. He would tell me about loss of vision, nerve damage, kidney disease. I knew I had to do something before it was too late. I didn't want to be the first to go before my parents. I lost a total of 7.5 pounds in 4 years doing vegan, weight watchers, low fat-high exercise, gluten free. you name it, I most likely did it. After I stopped all the weight came back. After all, the ADA diet didn't work for me. These were the so called expert nutritionists. Then, I went Vegan, which helped a bit. But I was getting hungry and still feeling tired all the time with no energy. I was introduced to the paleo diet from a colleague at work whose neighbor had success with it. I started reading everything i could on paleo diet. 3 days later, I decided to give the diet a shot as I had nothing to lose. Within 1 week I was feeling great and alive again! For the first time in years I didn't feel depressed anymore. I started feeling strong again. A few more weeks went by and I started to join a gym and work out twice a week. Now I am at the gym 3 to 4 days a week with incredible stamina. This has allowed me to enjoy playing basketball once again. The great thing about being on the Paleo lifestyle is 2 things. I have also lowered my A1C significantly to the point I am no longer diabetic. And I was able to get off the medications I was taking for my diabetes. Going on a Paleo diet was the best thing I ever did for myself. I could have avoided getting sick and gaining weight in the first place.     Turkish Puff Pastry – Pogaca Cake with Sesame Seeds

    For us, it sounded like a great idea to make Turkish puff pastries (Pogaca) in a cake tray! This is even easier than making the regular Turkish Pogaca! They are incredibly puffy and fluffy because they were left to rise for twice! Even though we cut them in pieces before we bake, they rise so much that they become one, which is still handy when you are serving. Because all that you should do is to cut the dough in to pieces and brush some butter and vegetable oil mixture between the layers. Make sure you place the first and last piece into the middle f the tray, for the cakes shape to be perfect. Cover it up and let it rise for around an hour We’ll roll the dough in 4 pieces, and between we’ll brush a mixture now we’ll prepare Our mixture is room temperature butter with vegetable oil Place baking paper in the a round baking tray Brush some egg yolk on the top You can garnish with sesame seeds, later let the dough rise for another 15 minutes On 200C (390F) pre-heated oven, bake for 25 to 30 mins Ingredients for Turkish Puff Pastry in Cake Tray Recipe 1/2 cup milk (warm) 1/2 cup water (warm) 1/2 tbs yeast 1/2 tbs baking powder 1 tbs vinegar 2 tbs yogurt 1/2 tbs sugar 1/2 tbs salt 1 egg 3 tbs vegetable oil 6 cups flour For the mixture to brush between layers: 1/2 stick butter 1/4 vegetable oil For top: 1 egg yolk
