Chipotle Chicken Bowls! Easy and Perfect For Meal Prep!

These bowls are my newest obsession and they will be yours too! So full of flavor and just the chicken alone will become something you will make repeatedly because it’s so full of flavor!

CHIPOTLE BOWLS RECIPE:
For the chicken and marinade:
2lb of Boneless, Skinless Chicken Thighs
2 Chipotles in Adobo plus 1 tbsp of the sauce from the can
Juice of 1 Lime, about 2 tbsp
2 Scallions, roughly chopped
2 Cloves of Garlic, smashed
1 tsp of Oregano
1/2 tsp of Cumin
1 tsp of Chili Powder
1 tsp of Granulated Garlic
1 tsp of Granulated Onion
1 Tbsp of Chicken Bouillon Powder
Pinch of Salt
2 Tbsp of Olive Oil
2 Tbsp of Water

For the Corn Salsa:
1-14.5 oz can of Corn Kernels, drained and rinsed
1/4 of a Red Onion, minced
1/2 of a Jalapeno, seeded and minced
Finely chopped Cilantro to taste
Salt to taste
Juice of about 1/2 Lime

For the Beans:
1-14.5 oz can of Pinto Beans, drained and rinsed
1 Tbsp of Neutral Oil
1/2 of a small Onion, minced
2 cloves of Garlic, minced
1/2 Jalapeno, minced
1 cup of Chicken Stock
Couple tsp of Chipotle in adobo sauce from the can
Salt to taste

For the rice:
1.5 cups of Long Grain Rice, well rinsed
Juice of 1 Lime
1 Tbsp of Chicken Bouillon
1 Dry Bay Leaf
Salt to taste
Fresh Cilantro to taste, finely chopped

Potatoes, eggs & hot dogs , an Italian childhood classic that fed generations and still hits every time. Sure, it’s not fancy… but ask anyone who grew up on this and they’ll pick it over filet mignon any day. Bonus points if you eat it in a sandwich by the beach like a true Italian (I swear it tastes even better at the beach) it’s such a humble thing but I think many many cultures relate to how special dishes like these really are for the soul! Approx recipe and instructions below! 3 medium size russets, peeled and thinly sliced 4 to 6 hot dogs (all beef for me) slices up 6 eggs Plenty of grated parm Plenty of S&P Olive oil I like cooking the potatoes in some olive oil over medium heat until they are about half way cooked (season them with a pinch of salt and pepper) then once there, add the hot dogs and continue cooking until the potatoes are fully cooked, add in the whisked egg and cheese mixture and cook until golden and set on the bottom, I use a fish spatula to kind of “slice it” into 1/4 pieces so it’s easier to flip but honestly this DOES NOT have to be perfect, it’s rustic home food. Cook until fully set then sprinkle more parm and enjoy every single bite!
