Drain and set aside. 2- In a jar, combine all the ingredients for the dressing. Place the lid on top of the jar securely, then shake until all ingredients are well combined. 3- Place the grated carrots, oranges and raisins in a large bowl. Add the dressing and mix to combine. 4- Divide the salad among the serving plates, sprinkle with the almonds and walnuts, then decorate with mint leaves and serve.
