[EN] Flan (Caramel Custard) / فلان كراميل – CookingWithAlia – Episode 663

Hello! Today we are going to make one of my favorite desserts: Flan!

INGREDIENTS:
Custard:
500 ml of milk
1/2 can (200 grams – 7oz.) sweetened condensed milk
3 large eggs
The zest of an orange
1 teaspoon ground cardamom
A pinch of salt

Caramel:
200 grams of granulated sugar

Other:
Boiling water

DIRECTIONS:
Step 1: Prepare the caramel
1- In a skillet over medium heat, place the sugar.
2- Cook the sugar until you get a slightly brown liquid caramel. Do not stir it at first, touch it at first, the sugar will melt all by itself until it becomes liquid. Make sure that the color of the caramel is not too dark otherwise your caramel will be burned.
3- Pour the caramel into a mold and divide it evenly to cover the entire bottom of the mold.

Step 2: Prepare the custard
4- Preheat your oven to 180 °C. In the same pan where you have prepared the caramel, pour the milk and place it on medium heat, bring the milk to a boil.
5- In a bowl, place eggs, orange zest, vanilla extract and salt and whisk together.
6- Add the sweetened condensed milk and mix again.
7- Add the hot milk to the bowl while stirring until you have a smooth mixture.
8- Pour the preparation in the mold on the caramel.

Step 3: Cook the custard
9- Place the mold containing the custard in a larger mold and place them in the hot oven.
10- Pour boiling water into the large mold until half the height of the custard mold.
11- Cook the custard for about 1 hour until it has a golden surface and shiny center, if you insert a knife, it should come out clean.
12- Remove from the oven and the water mold and let rest in room temperature.
13- Place the custard in the refrigerator for at least 4 hours.
14- At the time of serving, insert a thin knife into the edges of the mold and separate the custard from the sides of the mold then place a plate on the top of the mold and turn it upside down.
15- Carefully remove the mold and serve.

Cook until fully set then sprinkle more parm and enjoy every single bite!
