Easy Chocolate Eclairs Recipe

For the Eclairs dough
1 cup flour
1 cup water
1 tbs sugar
1 tsp. Salt
3.5 tablespoons of butter
3 eggs
For the Eclairs cream filling
2 cups milk
2 tbs. milk
2 tbs. flour
2 tbs. corn starch
1 cup sugar
1 egg yolk
1 tbs butter
For the Eclairs Chocolate Sauce
80 g (3 oz) of dark chocolate
100ml (1/2 cup) of whipping cream

Gently stretch slightly (it’ll spread as it rises), oil the top, cover with parchment, and let rise 1 hour. Preheat oven to 450°F. Dimple with oiled fingers, drizzle more oil, add salt + rosemary, and bake on the lowest rack for 20 minutes until deeply golden. Rest 5 minutes, then cool on a wire rack.
