6 large almond Macaroons (chewy Moroccan almond ghriba cookies)
100g dark chocolate, melted
1 pint (about 500ml) vanilla ice cream

1- Dip the bottoms of each almond Macaroon in melted dark chocolate and place them on parchment paper. Let the chocolate harden completely.
2- Slice the ice cream into thick disks. You can use a round cutter or simply slice and shape quickly.
3- Sandwich the ice cream between two Macaroons, with the chocolate sides facing inward against the ice cream.
4- Neatly trim the edges if needed. Wrap each sandwich tightly in plastic wrap, or place in an airtight container.
5- Freeze until firm, about 3 hours. Serve and enjoy!
