Chicken Cutlet Cesar Salad

This chicken Cesar salad with crispy cutlets is truly what dreams are made of. Used my favorite dressing recipe and seasoned with mainly lemon pepper and honestly it’s divine and beyond! All I need is a side of crispy fries for the ultimate *girl dinner* experience and I’m golden! Recipe below!

DRESSING:
2 Cloves of Garlic (or 1 if really big but these were small)
2 Tbsp of Mayo
2 tsp of Dijon Mustard
1 tsp of Anchovy Paste
Few Dashes of Worcestershire Sauce
Juice of 1/2 Lemon
Small Splash of Red Wine Vinegar
1/4 cup of Olive Oil
Salt to taste
1/2 cup of parm plus more (I just cut chunks and added it in)

CUTLETS:
6 Thinly Sliced Chicken Breast
1/2 cup of Panko
1/2 cup Plain Breadcrumbs
2 Tbsp of Flour
2 Eggs
Lemon Pepper Seasoning (or any seasoning of your choice)
Freshly Grated Parm
Salt to taste
Frying Oil of Choice

Potatoes, eggs & hot dogs , an Italian childhood classic that fed generations and still hits every time. Sure, it’s not fancy… but ask anyone who grew up on this and they’ll pick it over filet mignon any day. Approx recipe and instructions below! 3 medium size russets, peeled and thinly sliced 4 to 6 hot dogs (all beef for me) slices up 6 eggs Plenty of grated parm Plenty of S&P Olive oil I like cooking the potatoes in some olive oil over medium heat until they are about half way cooked (season them with a pinch of salt and pepper) then once there, add the hot dogs and continue cooking until the potatoes are fully cooked, add in the whisked egg and cheese mixture and cook until golden and set on the bottom, I use a fish spatula to kind of “slice it” into 1/4 pieces so it’s easier to flip but honestly this DOES NOT have to be perfect, it’s rustic home food. Cook until fully set then sprinkle more parm and enjoy every single bite!
