MONTEREY CHICKEN RECIPE:
4-6oz Chicken Breast
1/2 of a small onion, thinly sliced
3 Cloves of Garlic, minced
2 Tbsp of Olive Oil
Garlic and Herb Seasoning
Salt and Pepper to taste
1/2 cup of BBQ Sauce
3/4 cup of Freshly Shredded Monterey Jack Cheese ( I like a combo of Monterey and cheddar)

For toppings:
Crispy Bacon
Diced Tomatoes
Finely chopped Scallions
