894- Fancy Chekchouka / شكشوكة

Chekchouka is one of my favourite recipes to make for ftour!

INGREDIENTS:
Panzani Ricotta sauce
1 medium onion, diced
1 tomato, diced
1 green pepper, diced
2 garlic cloves, minced
4 eggs
Salt and pepper to taste
2 tablespoons olive oil
1 tablespoon parsley, minced

DIRECTIONS:
1- Heat up the olive oil in a skillet over medium heat, add the onions and garlic and cook for 5 minutes or until the onions are translucent.
2- Add the peppers. Season with salt and pepper and cook while stiring for 2 minutes.
3- Add the tomatoes and the Panzani Ricotta sauce, then cook for 5 minutes.
4- Using a spoon, create little wells in the sauce, crack an eggs in each well. Cover the skillet and cook for 3 to 5 minutes until the eggs are cooked through.
5- Season the eggs with salt, sprinkle with parsley and serve warm.
