[EN] Rainbow Pizza / بيتزا قوس قزح – CookingWithAlia – Episode 717

Colorful table series, the rainbow pizza, as the name implies, this pizza recipe is rich in colorful veggies that makes it a very attractive dish which you can’t resist 😉 Ramadan Kareem

INGREDIENTS:
Precooked Pizza Dough (4 medium sized disks or 1 large)

Pizza Sauce:
3 large tomatoes, grated and skin discarded
1 small onion, finely chopped
1 garlic clove, grated
1 tablespoon tomato paste
3 tablespoons olive oil
1 tablespoon dried oregano
1 tablespoon sugar
1 tablespoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground ginger
1 teaspoon onion powder

Toppings:
1/2 cup of grated cheese
1 cup broccoli
1 cup green pepper, cut into small cubes
1 cup yellow pepper cut into small cubes
1 cup red pepper cut into small cubes
1 cup cherry tomatoes cut in half
1 cup red onion cut into small cubes
1 cup canned corn
3 tablespoons olive oil

DIRECTIONS:
Step 1: The Pizza Sauce
1- On medium heat, heat olive oil in a pan. Add the chopped onion and cook for 5 minutes until it gets a golden color.
2- Add the grated garlic and tomato paste. Mix and cook for a few minutes.
3- Add the grated tomatoes and spices. Mix and cook for 15 minutes until the sauce thickens. Stir from time to time.

Step 2: The Pizza
1- Spread the pizza sauce on the pre-cooked pizza circles. Avoid adding the sauce to the edges of the crust or it would burn when baking the pizza.
2- Add the grated cheese on top evenly.
3- Arrange the veggies in a rainbow look and in a circular formation.
4- Drizzle some olive oil on top of the veggies and on the edges of the crust.
5- Bake the pizza in a preheated oven at 200 C / 400 F for about 20 minutes.

Cook until fully set then sprinkle more parm and enjoy every single bite!
