INGREDIENTS:
3 apples
3 pears
2 eggs
50 grams (1/4 cups) white granulated sugar
20 grams (1 1/2 tablespoon) butter, melted
100 milliliters (1/2 cup 2 tablespoons) milk
70 grams (1/2 cup 1/2 tablespoon) flour
1 1/2 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch of salt

DIRECTIONS:
1- Preheat your oven to 180°C / 360°F.
2- In a large bowl combine flour, baking powder, ground cinnamon, ground ginger, and a pinch of salt. Whisk!
3- In a separate bowl, place the eggs and sugar, and using a whisk, mix until you get a slightly foamy mixture and the sugar is completely dissolved.
4- Add the melted butter and milk and continue mixing until you have a smooth batter.
5- Combine the flour mix with the wet mix, and mix using a spatula.
6- Peel and slice the apples and pears into thin slices. Add them to the dough and mix until they are completely coated.
7- Butter a mold of 20 centimeter in diameter then sprinkle with flour. Pour in the apple pear mixture and pack well by pushing the top with a spatula.
8- Bake for about 40 minutes until the cake is done and has a beautiful deep golden brown color. Serve this cake warm or cold, dusted with powdered sugar.

Potato and Hot Dog Frittata – A Must Try!

Potatoes, eggs & hot dogs , an Italian childhood classic that fed generations and still hits every time. Sure, it’s not fancy… but ask anyone who grew up on this and they’ll pick it over filet mignon any day. Bonus points if you eat it in a sandwich by the beach like a true Italian (I swear it tastes even better at the beach) it’s such a humble thing but I think many many cultures relate to how special dishes like these really are for the soul! Approx recipe and instructions below! 3 medium size russets, peeled and thinly sliced 4 to 6 hot dogs (all beef for me) slices up 6 eggs Plenty of grated parm Plenty of S&P Olive oil I like cooking the potatoes in some olive oil over medium heat until they are about half way cooked (season them with a pinch of salt and pepper) then once there, add the hot dogs and continue cooking until the potatoes are fully cooked, add in the whisked egg and cheese mixture and cook until golden and set on the bottom, I use a fish spatula to kind of “slice it” into 1/4 pieces so it’s easier to flip but honestly this DOES NOT have to be perfect, it’s rustic home food. Cook until fully set then sprinkle more parm and enjoy every single bite!
