[ARABIC] سلطة الجزر و الزبيب / Carrot & Raisin Salad – أطبخ مع علياء / CookingWithAlia – Episode 435

سلسلة جديدة ! تطلع على هذه السلسلة الجميلة واللتي تضم وصفات من مدرسة الطبخ في المنزل العربي! تعلم كيفية تحضيرهذه الأطباق المغربية الأساسية مع الدادات بدءا من هذه سلطة الجزرة اللذيذة ! المكونات: * 4 جزرات متوسط الحجم * ¼ كوب زبيب ذهبي * 2 ملعقة كبيرة من السكر الأبيض * ¼ ملعقة صغيرة من القرفة المطحونة * ¼ ملعقة صغيرة من سكر الفانيليا (اختياري) * 1 ملعقة كبيرة من الزيت النباتي * 1 ملعقة كبيرة من عصير الليمون الحامض الطازج * قليل من الملح * ماء مغلي تحضير الوصفة 1. قم بتقشير الجزرات، ثم قطع اطرافها، وبعد ذلك اقطعهم من المتنصف بالطول، ثم قم بإزالة قلب الجزر الصلب. بعد ذلك اقطع كل نصف إلى جزئين ، ثم قطعهم إلى قطع صغيرة حوالى 0.5 سم لكل قطعه. 2. ثم ضع قطع الجزر في وعاء وقم بتغطيته بالماء المغلي. و اضف قليل من الملح، ثم غطي الوعاء، واتركه يطهى على نار متوسطة الحرارة حتى يصبح الجزر هش ولين قليلا ومقرمش. 3. عند ذلك قم بإضافة الزبيب الذهبي والسكر والقرفة المطحونة، وسكر الفانيليا (اختياري). واستمر فى الطهي واترك الوعاء مكشوف لحوالي 15 دقيقة، أو حتى تتبخر كل المياة تماما ويصبح الجزر مغطس في صلصة حلوة. 4. وأخيرا، اخلط وامزج عصير الليمون والزيت النباتي جيدا مع باقى المكونات. 5. ضع سلطة الجزر في وعاء نظيف وغطيه، ويوضع في الثلاجة حتى يبرد. وقم بتقديمه بارد. شهية طيبة!

WRITTEN RECIPE: http://goo.gl/VvjbX7 INGREDIENTS: Filling 200 grams (7 oz.) goat cheese ¼ onion, finely chopped 1 garlic clove, crushed 1 tablespoon finely chopped flat-leaf parsley Salt and pepper, to taste Other Sheets of warka pastry (replace with phyllo dough or spring roll wrappers) 1 large egg yolk Vegetable oil for frying RECIPE: 1- In a large bowl, combine all the filling ingredients: goat cheese, onion, crushed garlic, chopped parsley, salt, and pepper. Mix well with a fork until smooth. 2- Shape the pastries as follows. Also see illustrations. Forming Cigars a- On a flat work surface, cut the warka (or phyllo) sheets into squares. b- Take a sheet and place about a tablespoon of the filling onto the edge closest to you, leaving about 0.5 cm (1/4-inch) border along the sides. c- Fold in the warka edge over the filling. d- Fold in the left and right sides of the warka towards the center. d- Roll up the edge tightly, as if you were rolling a carpet. e- Brush the tip with a little bit of egg yolk to secure the cigar. Forming Triangles (Briwat) a- On a flat work surface, cut the warka (or phyllo) sheets into long strips about 5 cm (2-inch) wide. b- Take a strip and place about a tablespoon of the filling onto the edge closest to you. c- Fold the bottom left corner (closest to you) of the warka over the filling, aligning it with the right edge of the strip to create a triangle. d- Now flip the bottom right corner upwards and alight with the left edge of the strip. Continue folding this way, left and right, while maintaining the triangular shape, until you reach the end of the warka strip. e- Brush the tip with a little bit of egg yolk to secure the triangle. 3- Fry in a hot oil bath until cigars or triangles are golden brown then pat with paper towel to remove excess oil. Or lightly brush with melted butter (or olive oil) and bake in a preheated oven to 180 C / 350 F for about 10-15 minutes or until golden brown. 4- Serve immediately when still hot and crispy.

Let's start with this savory and sweet carrot salad that will make you rethink how to use carrots! WRITTEN RECIPE: http://goo.gl/CBMgPW INGREDIENTS: 4 medium-sized carrots 1/4 cup golden raisins 2 tablespoons white granulated sugar ¼ teaspoon ground cinnamon ¼ teaspoon vanilla sugar (optional) 1 tablespoon vegetable oil 1 tablespoon fresh lemon juice A pinch of salt Boiling water RECIPE: 1- Peel the carrots, trim off the top, cut in half lengthwise, and remove the hard core. Slice each half in two, then cut into 0.5 cm (1/4-inch) dice. 2- Place the carrots in a saucepan and cover with boiling water. Add a pinch of salt, cover the saucepan, and cook on medium heat until the carrots are crisp-tender. 3- Add the golden raisins, sugar, ground cinnamon, and vanilla sugar (optional). Continue cooking uncovered, for around 15 minutes, or until the water has completely evaporated and the carrots are soaking in a syrupy sauce. 4- Finally, mix in the vegetable oil and lemon juice. 5- Place the carrot salad in a bowl, cover, and chill in the refrigerator. Serve cool.
