INGREDIENTS: Buttercream (Video: https://youtu.be/jKquOJkjOts) STEPS: Step 1 – Prepare the Buttercream - Watch the video on how to make this buttercream - We are going to use red coloring for the roses and green for the leaves Step 2 – Prepare your tools - Prepare the piping bags: - we need white butter cream with a 59S tip - orange cream with a #5 tip - green cream with a #2 tip - yellow cream with a #16 tip Step 3 – Pipe roses - First, pipe the base of the orange blossom flower, a nice wide blob of white icing in the center of the nail. - Next, pipe the petals from the center and out. There are 5 petals total… and your first flower is done. Now, in the center of the flower, pipe the yellow heart. - Make more… here I am trying my first flowers. A few pointers: the piping tip with the white buttercream has to be vertical like a comma punctuation. Also, when you are piping the petals, make sure your hand is steady and pipe them out in one take without shaking your hand. - Practice, it gets easier! - Ice your cupcake with cream cheese frosting, then place the blossom flowers on top. - Now, pipe 2 oranges. These are just round small blobs of orange buttercream. - Finally, let’s pipe closed blossom flowers. First pipe little green balls, then top them with little white balls. Let's make Chocolate Cupcakes. This recipe is a keeper! INGREDIENTS 3 large eggs 115 grams (1/2 cup and 1 tablespoon) white granulated sugar 85 grams (3 oz.) dark chocolate 160 grams (3/4 cup) unsalted butter 1 teaspoon vanilla essence 65 grams (1/2 cup) all-purpose white flour A pinch of salt 14 grams (2 tablespoons) unsweetened cocoa powder 1 teaspoon baking powder RECIPE: Step 1 – Make the Batter - In a sifter, combine the flour, cocoa powder, and baking powder. Sift into a large bowl. - Place a separate bowl over a saucepan with simmering water. Add the butter and dark chocolate in the bowl, and let them melt over this hot water bath, or what we call “bain-marie”. - Once melted, remove the bowl from the saucepan and place it on your kitchen counter. Stir together the butter and chocolate into a smooth mixture of heaven. - Add the sugar and a pinch of salt, and whisk with love until all ingredients are well integrated. - Add the eggs one at a time to the chocolate mixture while mixing with an eggbeater. - Next, add vanilla paste and continue beating for a few minutes until you get a smooth fluffy texture. - Add the dry mixture, little by little, to the chocolate heaven and use your spatula to fold the ingredients in a gentle circular movement, from top to bottom, so we keep the nice fluffy volume of the whipped eggs. Step 2 – Bake the Cupcakes - Place the batter in a piping bag and pipe it in cupcake liners that you already placed in your cupcake baking pan. - Fill the cupcakes liners 2/3 of the way full as the cupcakes will puff up when baked! - Bake in a preheated oven to 360 F / 180 C for about 25 minutes. - Once done, gently press in the center of the cupcakes.
