Natalie Heath’s Fermented Moroccan Spiced Rainbow Carrots Recipe

Probiotic & enzyme rich raw cultured veggies. Boost your health, digestion & immune system with this delicious recipe. 2 large (or 4 smaller) purple carrots, grated 2 large (or 4 smaller) yellow carrots, grated 2 large (or 4 smaller) orange carrots, grated 2 red onions, finely sliced 3 garlic cloves, finely sliced 2 tbsp. Moroccan Ras el Hanout spice mix 200ml brine (1 tbsp. sea salt mixed with 200ml pure water) 50ml sauerkraut juice or water kefir or kefir whey Mix veggies and spices in a large bowl until well combined. Pack tightly into a 1.25 litre Kilner jar. Pour in brine slowly a bit at a time, waiting for it to sink down to the bottom of the jar and then topping up again. Use more or less as you require, depending on the volume of your veg. Pour on the sauerkraut juice or water kefir or kefir whey to inoculate it and fill with good bacteria to aid the fermentation process. Pack a couple of cabbage leaves on top to hold the veg under the liquid and close the lid. There should be about a half an inch or so space between the liquid and the lid to allow for expansion. Leave to ferment for 3 days in a warm place (kitchen is usually fine). Make sure you stand it on a plate or bowl as it might bubble over while fermenting and make a mess! Then it's ready to eat. Keep in the fridge and enjoy with salads, main meals, lunches, in sandwiches or simply as a nutritious snack!
