Moroccan lamb with couscous recipe – Waitrose

Ingredients: 350g essential Waitrose Lamb Neck Fillet, thinly sliced 2 tsp harissa paste 1 tbsp essential Waitrose Vegetable Oil 1 essential Waitrose Onion, sliced 800g can essential Waitrose Chopped Tomatoes 50g pitted black olives, sliced 250g essential Waitrose Couscous 400ml hot lamb stock Green beans, to serve Method: 1 Mix the lamb and harissa together and season. Heat the oil in a large saucepan and fry the lamb and onion for 5 minutes. Add the tomatoes and olives, half-cover and simmer gently for 30 minutes, stirring occasionally. 2 Meanwhile, place the couscous in a large bowl, pour over the hot stock, cover and leave for 5 minutes. Moroccan Delight (Couscous recipe)

This is a recipe that I had published in Richard Simmons Foodmover Cookbook about 10 years. It can be served hot or cold and with or without shrimp. Ingredients: 1 box Near East brand plain cous cous 1 can (I prefer Del Monte) stewed tomatoes juice & zest from 1 lemon 2 T. fresh minced parsley 4 cloves crushed garlic 3 c. baby spinach leaves *optional 1/4 - 1/2 lb. baby shrimp Prepare couscous as directed on box, omitting butter & salt. Cover spinach leaves in a glass bowl and steam for approx. 4 minutes, drain Combine all ingredients and serve warm, or refrigerate and serve cool a few hours later. Enjoy! **PS...Jonny and I just had a bowl of this chilled for dinner...OMG, I'd forgotten how good it really is! YUM!
